Spinach Feta Wrap

This is a great recipe to freeze and make in advance. The Spark Solution says, “To freeze, allow the wrap to cool, then store in a zip-lock bag or plastic wrap. To reheat, microwave on high for four minutes.”


Starbucks Spinach and Feta Wrap Recipe


1 7-inch whole-wheat tortilla
1/4 cup sliced mushrooms
1/4 teaspoon black pepper
2 cups fresh spinach
1 large egg, plus 1 egg white, lightly whisked
2 tablespoons crumbled low-fat feta cheese
1 tablespoon sun-dried tomatoes, chopped


  1. Place the tortilla on a microwave-safe plate and heat on high for one minute.
  2. Coat a small skillet with cooking spray, then place it over medium heat. Sauté the mushrooms and pepper for two minutes.
  3. Stir in the spinach and sauté for another one to two minutes, or until wilted.
  4. Add the eggs and cook, stirring often until they are set, about two minutes.
  5. Place the egg scramble in the center of the tortilla, then top it with the crumbled feta and sun-dried tomatoes. To wrap, fold up one end, then both sides. Serve immediately or wrap in foil and take to go.

It’s only Wednesday (Day 111) but I feel like the weekend is just around the corner. I have healthy plans, like making donuts. Don’t worry! They’re healthy! …Is that a self-defeating statement? My cheat today was some Boy Scouts Kettle Corn. Delicious. But bad. Pandora the bunny was a much better snacker.

Feativals and Sunshine

Day 108? I ran outside today (cooling down now and posting from my phone), 3 laps- I.e. 0.75 miles. I feel fairly certain I could have gone a few more, but I stopped to read a sign and lost my rhythm. I would be proud, but I went to a festival this morning and ate all the oh-so-healthy featival foods (bbq and fudge, specifically), so I am still in the “health negative”. Nonetheless, I am pleased I ran, however little.


Sorry I’ve been out of touch. Life got crazy busy.  We are at day 207, for those keeping score. I started running more and can now make it over a mile without my calves seizing up. This is good progress! My husband says the second mile is easier than the first and so on. I am planning a trip for the one year anniversary of this blog: a camping/hiking trip in the Appalachians. I wanted to go at the end of this semester, but the parks at the southern base of the trail close for the winter and won’t reopen until April. No worries; that gives me plenty of time to get my legs in fully-functional, working order. My goal is to be able to run five miles by then (closer goal: a 5k by Christmas).

Oh and, p.s., the weather has been beautiful lately, in the 60*s.
